The water is the source of life. And the main ingredient in the beer (beer consist of 90% water). So the quality of water is essential to the quality of beer. At Kaon Brewery, we have implemented the highest technology for water purification, to make sure that the water we use is 100 per cent microbiologically clean.

In 1854, epidemiologist John Snow risked his life to track the cholera outbreak in Soho, London. His work resulted in one of history’s most important maps:
He found that the houses that were not affected by cholera, were a group of monks living near their brewery who consumed only beer instead of water, which lead to the finding that the cause of cholera was the contamination of drinkable water that came from the public pumps. The reason why beer is microbiologically clean is that the fermentation kills pathogens, which saved the lives of the monks.
